Authentic Chinese Cuisine: For the Contemporary Kitchen - 185 pages. This is one of the most authentic Chinese cookbooks ever written. It has recipes from all four major regions in China. Recipes often call for authentic Chinese ingredients. The Chili Green Beans are excellent. Breads include whole-meal bread, chapatis, puris, pita, bagels, paratha and rolls.
