Pasteurization (heating) of milk increases its shelf life. Ultra-pasteurization, which is heating the milk to an even higher temperature, extends the shelf life even further. Homogenization makes it so the cream that is normally on the top of milk is not at the top of milk. In the pass when milk was purchased it was delivered fresh daily with the cream on top. Homogenization is done solely to increase profits.

It is extremely important to only eat organic milk as it is very difficult to get unhomogenized non-organic milk, while organic milk is usually not homogenized. Plus organic milk is not allowed to have hormones in it and the cows are fed a much more healthy diet.

When milk has not been homogenized, it fats and xanthine oxidase are digested in the small intestine and stomach. The xanthine oxidase in homogenized milk is not digested but remains unbroken down and enters the blood system in that form which tends to causes problems with the arterial walls and in the heart muscles. It causes tissues to scar and causes calcified plaque to build up on the walls of the arterial walls. Cholesterol and fatty deposits then tend to collect in these damaged artery walls, which narrows the passage ways of the arteries and restricts the flow of blood.

Pasteurized and homogenized milks products such as milk, yogurt, cheese, ice cream, cottage cheese and whey products make up about 25% of the American diet. Dr. Bernard Jenson in his excellent book, Guide to Better Bowel Care, states that he believes that 6% is the proper percentage that dairy products should be in the diet.
