Often ingredients in processed foods can contain meat, fish or egg products. Many people define vegetarian dishes to include just no meat or fish, while eggs are considered to be vegetarian.

Therefore if you ask if a product that contains egg is vegetarian, you may be told that it is vegetarian.
Often, even though a dish may appear to be vegetarian, it may contain ingredients that are not vegetarian. When a food contains natural favors, it may be derived from meat. Different chemicals and additives such as mono- and diglycerides may be derived from either meat or vegetarian sources. Cheeses may be made with an enzyme that is derived from either meat (cow's stomach) or a vegetarian source.

Vegetarian foods may be cooked on a surface that may also be used to cook meat. So if you are interested in maintaining strict vegetarian principles, it is important to ask what surface grilled dishes such as veggie burger are cooked on, and whether the grilled dish is cooked on the same surface as meat. Often meat is cooked on the same grill as what a veggie burger or grilled cheese are cooked on.
Also foods that are cooked in oil may have meat cooked in the same oil. So it is a good idea to ask when ordering French fries or other such dishes, whether meat, chicken or some other non-vegetarian item has been cooked in the same oil.

Table sugar is made from either sugar cane or sugar beet. About half of the sugar used in the United States is made from cane sugar. Cane sugar is passed through charcoal, which can be made from animal, mineral or plant origin. About half the plants that process sugar use animal products to process the sugar. Since it is not usually possible to tell how the sugar was processed, vegans usually will not eat processed sugar.

Brown sugar, granulated sugar made from cane sugar, and confectioner's sugars are acceptable for vegetarians because they are not processed. Other satisfactory sugars are maple syrup, turbinado (raw) sugar, date sugar and sugar derived from fruit juice.
Often kosher gelatin is kosher but is not vegetarian (derived from meat or fish). Some gelatin is derived from fish products. To be kosher a product cannot mix meat and milk, but if gelatin is derived from fish and then mixed with milk, the product would be considered to be kosher because fish and milk can be mixed together and be kosher, but of course this product is not suitable for vegetarians.

Chinese stir-fry sauces may contain oyster sauce. Even in so-called Chinese vegetarian restaurants, oyster sauce (real, not just in name only) may be in the food. As some Chinese consider oysters to be vegetarian, therefore even when you ask if the food that contains oyster sauce is vegetarian, you may be told that it is vegetarian. Therefore you should ask if the food in question contains real oyster, not just that it is vegetarian.

Kosher symbols cannot always be used to tell if a food is vegetarian. To have the "K" or "Kosher" symbol on foods means that a rabbi overlooked the manufacturing process, and that it meets Hebrew dietary laws. Kosher food cannot contain both dairy products and meat together. A possible problem could be that an ingredient like gelatin made from a meat product can be considered kosher, if it is not mixed with milk. The manufacturers can add this kosher gelatin to yogurt and state on the label that it is kosher gelatin, and one could be fooled into thinking that this product is kosher, which means that meat and milk are not mixed, while in fact they are mixed together. The gelatin is kosher but the yogurt product is not.

"P" or "Parve" means that a food product does not contain meat or dairy products, but may contain eggs or fish.

"D," as in "Kosher D," means that the food product contains dairy or is made on a machine that was also used to process dairy products.

Many companies do not put the word "animal" on the ingredient label in order to not lose customers.
Good books in reference to ingredients are the Consumer's Dictionary of Cosmetic Ingredients and the Consumer's Dictionary of Food Additives.

Sautéed vegetables may contain chicken stock or pork.
Cooked greens may contain salt pork in the South.
Spinach may contain eggs or bacon.
Baked goods, including cakes, cookies, pies and baked desserts, usually contain eggs.
Breads may contain eggs.
Quiche often contains eggs.
